Coconut milk is not the liquid from inside the nut, but the extract of freshly grated coconut flesh after soaking in hot water and straining off the liquid.

 


Coconut milk is derived from the flesh of the coconut. It is not the liquid that can be drained out from a coconut that has been punctured, although many people assume this.

Coconut Milk (and Coconut Cream) - Are sometimes called for in recipes, particularly in curried dishes. Coconut milk is made by combining equal parts water and shredded fresh or desiccated coconut meat and simmering until foamy.

Can be bought in cans or in powdered form, or made as follows: To 2.5 cups boiling water add the grated flesh of one coconut (or 4 cups dessicated coconut). Leave to stand 30 minutes, squeeze coconut and strain.

Coconut milk may be canned from the grocery store. When using fresh coconut, milk grated coconut meat with 1/2 cup of water, then set aside. Again, milk the grated coconut milk for the second time using 1 1/2 cups of water.

Coconut milk is an extremely important ingredient for many cuisines of Asia.

Coconut Milk - This is not the liquid that is found in the center of coconuts, but a thick liquid made by steeping fresh grated coconut in hot water. The hot water helps to extract the fat from the coconut meat, which carries so much of this flavor.

*Coconut milk, as you rightly recall, is made by mixing equal parts of shredded coconut and water, and simmering until foamy. Then the mixture is strained through cheesecloth, and you squeeze as much liquid out of the pulp as possible.
