Convection Cooking - convection ovens use a small fan in the rear of the oven to circulate air all around the food to cook it quickly and more evenly. Cooking times are generally reduced by 25%.
Convection cooking: A method of cooking in which a fan continuously circulates heated air in the oven cavity while foods are cooking. Advantages are that some foods cook faster and larger quantities of food can be cooked at one time.
