Cookie presses save rolling dough and cutting it out. They create uniform cookies that can look like they were professionally manufactured. You can also use a cookie press to make pastries and edible decorative accents for many different desserts.

The cookie book Got Milk?, by Nancy Cullen, says a good approximation of a bakery glaze is to mix 2-3/4 cups of confectioner's sugar with 5 tablespoons of boiling water and 1/2 teaspoon of vanilla extract.

Leave the cookies to cool on the baking sheet for 4-5 minutes, then transfer them to a cooling rack to harden as they cool.
