A cookie sheet may be aluminum, coated with a non-stick finish or 'insulated.' An insulated cookie sheet has two layers of aluminum, with air in between. This helps ensure golden-brown, not burned, bottoms.

Cookie sheets: at least two metal sheets with either no sides or low sides. In a pinch, substitute a 15 x 10 x 1-inch (jelly-roll) baking pan, though the rims may inhibit even browning.

To toast nuts, preheat the oven to 350 degrees Fahrenheit, spread the nuts in a single layer on an ungreased cookie sheet, and bake for six minutes.

To freeze, simply wash and pat dry, then arrange individual grapes in a single layer on a cookie sheet or plate and freeze thoroughly (at least two hours). When frozen, transfer to a suitable freezer container.

Don't put the dough on a hot baking sheet " allow it to cool after it comes out of the oven or invest in a fleet of cookie sheets. On a hot sheet, the dough will begin to spread before you even get it into the oven, and you've lost part of the battle.
