Shaoxing or Chinese Cooking Wine is the wine most commonly used when a dish requires wine in its recipe. Cognac, preferably Cognac X.O. is the liquor of choice for use in some Chinese gourmet dishes.

Rice Wine A dry, strong, flavorful, clear Chinese cooking wine made from fermented rice. This sherry flavored wine is used in Chinese stir fried and steamed dishes.

Some cooks eschew cooking wines because of the added salt, which tends to flavor the final dish, sometimes unpleasantly.

Madeira can also be used as a cooking wine for savory dishes and dessert sauces. There are several varieties of this well-known beverage, such as Sercial, Malmsey, Bual, and Verdelho.

"Futsu-shu" is the lowest grade sake and is used in Japan most often as cooking wine. "Honjozo-shu" is a slightly better grade and is stronger and fuller; it can be served hot or cold.

It doesn't need to be a fine wine; a good table wine will do. Avoid products labeled as cooking wines because they contain salt. After adding wine to sauces and stews, simmer the food for 10 to 15 minutes to evaporate the alcohol and blend flavors.

Madeira - A wine named after the island where it's made, Madeira is a sweet, fortified wine often served as an after dinner drink. Madeira is also a very good cooking wine.
