Cooling racks in general are not expensive, and you might want to purchase a couple of different ones to accommodate a variety of baking purposes.

Cooling Rack: Also known as cake rack are a open metal wire rack used to cool baked goods like cakes and cookies, after they have been removed from the oven. Cake and cooling racks are available in round or rectangular shapes.

If large quantities of eggs are being prepared for salads, a method that works faily well to dice eggs is to use a common cooling rack with narrow-wired square grids.

Using oven mitts or hot pads, place a wire cooling rack on top of the cake and baking pan. Turn cake over so wire rack is on the bottom. Gently shake the cake to release it from the baking pan.

Grease a cooling rack with a little oil and place the mackerel on the rack, skin side down. When the mixture begins to smoke, place the rack on top of the pan or wok and cover with aluminium foil.

Cool 15 minutes in pan on wire rack. Pick up foil edges and carefully remove cookie from pan to cooling rack; cool 15 minutes. Turn cookie upside down onto another cooling rack; remove foil. Place cookie on large serving platter.

Remove and let cool on cooling rack for 10 minutes. If you don't let it cool a bit before cutting the molten hot cheese will flow like lava off your pizza and on to your counter.

Bake 30 minutes until golden brown. Transfer to cooling rack and allow to cool for 10 minutes. Place on cutting board and with serrated knife, slice diagonally about 1/2-inch thick.
