Brown beans are closely related to pinto beans, black beans, cranberry beans, and kidney beans. Because they are native to Sweden and are widely used in Swedish cuisine, brown beans are sometimes called Swedish brown beans.

Pinto beans are full-flavored, mealy-textured beans with distinctively mottled brown-and-tan skins-their name means "painted." Pinto beans are available dried and precooked in cans." Similarly patterned cranberry beans can be substituted.

There are two main types of beans that are eaten fresh: 'edible pods,' including green, snap, yellow wax and scarlet runner; and immature 'shell beans,' including fava, soybeans, cranberry beans and limas (also known as butter beans).

Freshly shelled borlotti need no soaking, as they do when dry. Instead, care must be taken to cook them until they are tender and no more. If borlotti beans are unavailable, cranberry beans, pink kidney beans or pinto beans can be substituted.
