A cutting board, also known as a chopping board, is a kitchen utensil (see list of food preparation utensils), used as a flat surface on which to cut or slice things. Cutting boards are often made of wood or plastic.

 


Cutting boards made of plastic are usually dishwasher-safe, which many experts see as a higher degress of sanitation.

Cutting board care comes down to three simple steps: clean, sanitize and dry. You don't necessarily need to do all three things each time you use your chopping block. It all depends on what foods you're handling.

Referred to as breadboards in some recipes. Buy a variety of sizes and at least one which is dishwasher safe to use with raw meat. Keep one board just for bread making and several small ones for quickly chopping an onion.

Cutting boards are a potential breeding ground for bacteria, and can be quite hazardous unless safety precautions are taken.

On a cutting board, place the remaining 5 garlic cloves, sprinkle with a few pinches of coarse salt, then chop. Add the sun-dried tomatoes, 1/2 cup olives, herbes de Provence and the 2 tsp. pepper and continue to chop to form a coarse paste.

It is a "cutting board" purchased from a kitchen gadget type store. It is a thin plastic sheet, smooth on one side, just slightly pebbly on the other.

Transfer logs to cutting board. Use a serrated knife to cut each roll diagonally into 1/2-inch slices. Place slices, cut sides down, on cookie sheets. Bake for 10 minutes. Turn cookies over; bake 10 to 15 minutes more or until crisp and golden brown.

Transfer lamb to a cutting board and let stand 5 minutes. Cut lamb into chops and serve with sauce.
Makes 4 to 6 servings.

The piece of meat to be cut is laid out flat on a cutting board and cut in half parallel to the board from one side almost all the way to the other. A small "hinge" is left at the one side, which is used to fold the meat out like a book.

To easily peel garlic, separate the cloves from the bulb and place them on a cutting board. Lay the flat side of a broad knife on top of one clove at a time. Tap the knife with a closed fist.

A knife and a cutting board is all that is absolutely essential, but if you happen to have one, a food processor can cut down on preparation time.

Anchor a pastry cloth or kitchen towel (not terry cloth) around a large cutting board (at least 12 x 12 inches) with masking tape, and use a cloth cover (stockinet) for your rolling pin.

Onions may be either served raw or cooked. Cutting onions can be a harrowing experience and often bring tears to the eyes. Folklore says that burning a candle close to the cutting board may decrease the pain.
