Date sugar is not sugar in quite the same way other types are, like those derived from cane or beets. It's not processed to create sugar alcohol or a smooth melting effect, instead it's merely made from very finely chopped dry dates.

Date Sugar
An unprocessed sugar made from dehydrated dates that are ground into small bits to be used as a sweetener. Date sugar is high in fiber, and has a long list of vitamins and minerals, including iron. It is light tan in color.
