A deep fryer consists of a large tank, into which the oil is poured, and a basket, which can be safely submerged into the oil after it has gotten hot enough. There are both commercial and home models of the deep fryer.

Deep fryer: a piece of kitchen equipment used for deep-frying food items in hot oil or fat.
Deep-frying: cooking method that requires that the oil be deep enough to completely surround the food being cooked.

Use a deep fryer, an electric fry pan or a heavy pot and a good kitchen thermometer for deep frying.

Use a deep-fat thermometer to check the temperature of the fat even if you're using an electric deep fryer. If a thermometer isn't available, drop a cube of white bread in the hot oil.

Family legend says that, Monica Flin, who started the restaurant in 1922, cussed in the kitchen when a burrito flipped into the deep fryer.

Next, pour some flour into a shallow dish; dredge the meat or vegetables in the flour, then in the batter and place gently into the deep fryer or skillet with hot oil. Cook until batter is lightly browned and meat is cooked through.

An average fat temperature for deep-frying is 375 degrees, but the temperature varies according to the food being fried. Use a deep fryer, an electric fry pan or a heavy pot and a good kitchen thermometer for deep frying.
