Dehydrate - To remove moisture from food by drying it slowly in the oven or in an electric or manual dehydrator.

Panko (dehydrated bread crumbs)
Japanese dehydrated bread crumbs with a coarser texture than regular bread crumbs. Available at most supermarkets or oriental groceries. To make panko, use white bread and make coarse crumbs in the blender.

Dehydrated alfalfa is also widely used as a feed, for horses particularly.

Dehydrated onions and mushrooms, along with canned vegetable juices, are great for soups, stews, and dutch oven meals with the additional benefit of reducing the need for added salt due to the concentrated flavor.

Dehydrated yeast that can be used in most yeast bread recipes. To use in bread machines, you may need to increase the amount to 1 teaspoon for each 3/4 teaspoon of bread machine yeast.

The French term for butter.
Beurre mainé
Literally, handled butter. It is an equal mixture of soft butter and flour, used for thickening soups and sauces.

Active dry yeast is in the form of tiny, dehydrated granules. The yeast cells are alive but dormant because of the lack of moisture. When mixed with a warm liquid (105° to 115°F), the cells once again become active.

It can be purchased fresh, in cans, in jars, or dehydrated. Tahini comes in two varieties - 'hulled' and 'unhulled'. Both types are relatively high in vitamins and proteins.

A bouillon cube is a compressed cube of dehydrated beef, chicken, fish, or vegetable stock. Bouillon granules are small particles of the same substance, but they dissolve faster.

Garlic Powder - finely ground dehydrated garlic; used as a seasoning; also known as powdered garlic.
Garlic Salt - a blend of garlic powder, salt and an anticaking agent or humectant; used as a seasoning.

The differences among them are these: Active dry yeast is dehydrated yeast; it is granular and comes in 1/4-ounce packages. Some recipes call for active dry yeast to be "proofed" in warm water and sugar before the flour is added to make the dough.
