Also referred to as sweetmeal biscuits, digestives are made from coarse brown flour which give them their distinctive texture and flavour.

 


Digestive biscuits and Graham crackers
These two items are fairly different, but are used similarly (e.g. to make crumb crusts for a cheesecake). Graham crackers are sweeter, and are available in different flavors (e.g. cinnamon, chocolate).

Digestive Biscuits
A digestive biscuit is a semi-sweet biscuit known for its qualities that enable it to be easily digested.

Digestive Biscuits - [Great Britain] Graham crackers.
Dijon Mustard - A prepared mustard (originally made in Dijon, France) which may be either mild or highly seasoned.

Digestive biscuits: Almost the same as US graham crackers.
Dredge: To prepare food for sautéing or searing by lightly coating with cornmeal, flour or dry crumbs.
Drippings: Meat fat and juices that drip into the pan during roasting.

Bash the digestive biscuits into crumbs. Melt the butter over a low heat and mix in the biscuit crumbs and lemon zest. Lightly grease a 25cm/10in loose-bottomed cake tin and press the crumbs into the base and up the sides slightly.

Digestive biscuits: these British crackers are similar to American Graham crackers, only they're more crumbly and less sweet. They're often crushed into crumbs and used to make pie crusts.
Digestivo (It.): liqueur.

225g chocolate (plain or milk)
25g caster sugar
100g butter (unsalted)
225g crushed digestive biscuits
1 egg
1 orange
Brandy! This is optional, but if you are going to use it, you'll need about 4 tablespoons.

Graham Crackers
A wholemeal biscuit (cookie) with honey and soda
taste. Can be substituted for Digestive Biscuits but are not exactly the
same thing.
