Dover sole is a flatfish which many consider to be one of the finest available in British waters.

The one real McCoy is the Dover sole, which has firm flesh and a delicate taste, but is imported from Europe and expensive.

While I can appreciate all of the nouvelle cuisine "Light and Healthy" stuff, and yes, Poached Dover Sole in a Lemon/Basil & White Wine Sauce, served over Angel Hair Pasta does sound appealing at times, just give me a really good piece of meatloaf, ...

Flat fish such as brill, dab, flounder, plaice, witch and both lemon and Dover sole, are usually sold whole or in fillets. Larger flat fish, like halibut and turbot, are often sold as steaks and only the wings of skate are sold.

This is why the fish markets and restaurants deceptively call much of the flounder sold in America "sole". Gray sole, lemon sole, rex sole, and the Dover sole of the Pacific are all flounders.

A popular flatfish with a delicate flesh with a firm, fine texture. The best:known variety is "Dover sole" (also called "channel sole)." Much of what is sold as "sole" in the U.S. is actually a variety of flounder, which isn't a true sole.
