Enoki mushrooms are edible mushrooms which are very popular in Asian cuisine, especially in Japan.

 


Enoki mushrooms - Also known as enokitake mushrooms. Thin, long-stemmed mushrooms with a mild flavor.
Espagnole - Brown sauce made with brown stock, caramelized mirepoix and tomato puree, and seasonings.

Enoki Mushrooms:
Small white mushrooms that grow in clumps with long, thin stems and a mild, almost fruity flavor.

Enoki mushrooms are tiny and dainty with a creamy white cap on a long slender stem.
