Fines herbes, or fine herbs, are a staple of French cuisine. This classic mixture of French herbs is traditionally used fresh in a wide range of dishes, although it is also available dried.

Fines Herbes - French, "fine herbs", usually a mixture of parsley, chives, tarragon, and chervil used to flavor omelets and in casseroles and soups.

Fines herbes: combination of several finely minced fresh herbs used for flavoring and garnishing. Traditional fine herbs are equal parts of parsley, chives, chervil and tarragon, but any combination of mild-flavored fresh herbs may be used.

Dried herbs can be blended in the same proportions as the fresh and may be added to dishes earlier than the fresh when cooking. Note though, that if a recipe calls for fresh fine herbs, ...

Cicely is also used fresh on salads and is one of the herbs used in a combination blend of herbs known as ''fine herbs''. When dried, cicely looses most of its flavor.
