Flatfish include plaice, sole, turbot, halibut and brill. Fillet flatfish by slicing them along the backbone. The backbone in flatfish usually runs along the midline of their body.

Flatfish - Includes flounders, flukes, sole, dabs, and plaices. Distinguished by their eyes (on top of their head), and swimming style (on their side). Have thin, fine-grained flesh; all can be used interchangeably.

King of the flatfish
Dover sole is a flatfish which many consider to be one of the finest available in British waters.

Halibut: Large flatfish of the species Hippoglossus hippoglossus and Hippoglossus stenolepis. It is usually sold in steaks or fillets, and is available year round. The flesh is firm, and has good flavor.

halibut - Halibut is a large flatfish, resembling the turbot in appearance, and is the largest in the flatfish group. They sometimes weigh in at over 500 pounds and six feet in length.

There is another flatfish found in the Atlantic, with a market weight of 2 to 3 pounds, that is known as the sand dab, but is more correctly named American plaice.

A name given to several types of flatfish that are a variety of flounder. Dabs are saltwater fish that have flaky white flesh when cooked and a mild flavor.

The most desirable halibut with the best flavor usually weigh less than 10 pounds. Halibut is a member of the flatfish family and can be used as a substitution in recipes that require other types of flatfish such as flounder and sole.
