Flautas are a Mexican dish made by wrapping a tortilla around a savory filling and deep frying the result. The flautas are served hot out of the fryer, topped with an assortment of ingredients.

They're traditionally used to make burritos, chimichangas, fajitas, flautas, and quesadillas, though some cooks use them to make everything from spring rolls to peanut butter sandwiches.

Similiar to creme brulee but without the crisp caramel topping.
