Peaches are divided into two classifications: 'Clingstone' and 'Freestone', with many varieties within each classification. The names (Clingstone and Freestone) refer to how easily the flesh of the peach separates from the stone.

Freestone: a term that refers to a fruit with a pit to which the flesh does not cling. The opposite of freestone is cling stone.
Freeze: to reduce the temperature of foods so that the liquid portion solidifies.

peach Notes: Most of the peaches that are sold in markets are freestone, and de-fuzzed by the grower. Select peaches that are colorful and free of bruises.

Both freestone and cling (the fruit "clings" to the pit) varieties come to market. Choose unbruised, aromatic nectarines without any tinges of green. If necessary, hold at room temperature, sealed in a paper bag, until they yield to gentle pressure.
