Fruitcakes - They are holiday and wedding cakes, which have a very heavy fruit content. They require special handling and baking to obtain successful results.

Fruitcake: a traditional Christmas cake of English origins, with candied and dried fruits, nuts spices. A traditional winter holiday cake. Often soaked with liquor or brandy.

Canned cranberry sauce is to Thanksgiving what fruitcake is to Christmas; it's nobody's favorite, but without it, the holiday's just aren't the same.

panforte (pahn-FOR-teh) - An Italian confection (a round, flat cake) that is a cross between fruitcake, candy, and honey cakes. It contains a tiny amount of flour (just enough to hold the fruits and nuts together).

I have found that you can make a nice fruitcake for Christmas using the Applesauce Cake recipe (p. 385, Low Protein Cookery for PKU). To the batter, add 1 oz.
