In China, gai lan is used in stir fries, steamed in dumplings, and eaten fresh in green salads. The faint bitterness of the vegetable complements a wide range of flavors, especially in green or herb salads.

Chinese Kale (Gai Lan, Chinese Broccoli) Kai lan is same as Chinese Kale (Gai Lan, Chinese Broccoli). Chinese Kale, also called Kailaan or Chinese Broccoli, has glossy, blue-green leaves with crisp and thick stems.

Chinese broccoli = Chinese kale = gai lan = gai lum = kai lan Notes: Like rapini, Chinese broccoli has small stems and green heads (which actually are flowers) and lots of leaves. But Chinese broccoli is leafier and less bitter than rapini.

Broccolini is a naturally-occurring cross between broccoli and gai lan (Chinese kale). Broccolini is a trademark of the Mann Packing Co. and is described by their site as "Sweet Baby Broccoli".
