A galette is a type of French pastry made with a rich, flaky crust, and traditionally served at Epiphany, on the 6th day of January. Many bakeries also offer galettes year round, in both savory and sweet incarnations.

Galette - [French] pancake; usually sweet, made of batters, doughs, or potatoes. Brioche-type dough or puff pastry are often used. Small short butter cookies were once also called galettes.

Galettes are round thin French cakes made from puff pastry or a yeast dough, sprinkled with sugar before baking. A savoury galette may be made from potatoes. Buckwheat crepes in Normandy are called galettes.

Buckwheat flour is also used to make Breton crepes called galettes.
Chestnut flour is popular in Corsica, the Périgord and Lunigiana. In Corsica, it is used to cook the local variety of polenta. In Italy, it is mainly used for desserts.
