Genoa salami is a cured meat product which is closely associated with the Italian city of Genoa.
Genoa Salami A mild, spicy, Italian cured sausage often made of only pork, and typically seasoned with garlic, salt, peppercorns, and red wine. Included in most antipastos. Gnocchetti Curved-shell pasta with ridges on the outer surface.
Many of the sausages that became famous were named for the localities where they were first made: the frankfurter in Frankfurt, Germany; the bologna in Bologna, Italy; the genoa salami in Genoa, Italy.
Many salami, like the popular Genoa salami, are air-dried and somewhat hard. Others, like cotto salami, are cooked, which makes them softer and more perishable. Most salami are made of pork, but all-beef kosher salami are also available.
