Grape Leaves - The leaves of the grapevine, often used in Greek and Middle Eastern recipes to wrap food for cooking. Pickled in jars in brine. Find in finer supermarkets and delicatessens.

grape leaves - Leaves from grape vines originally planted in the Mediterranean region, but now grown locally. Available in jars, packed in brine, at specialty food stores and some supermarkets.

Blanched grape leaves stuffed with a seasoned mixture of ground lamb and rice, braised in stock, oil and lemon juice. Other foods that can be used as casings include squash, eggplant, sweet peppers, cabbage leaves, quinces and apples.

Dolmas are grape leaves traditionally stuffed with a mixture of rice and lamb, and they are made all over the Middle East and in parts of the Mediterranean region.

1. Dolma (Stuffed Grape Leaves)

Chinese chefs have been known to use the leaves much as others use grape leaves: stuffed and rolled. Germans add the leaves to stews and court bullions. And in England, the gin based drink, Pimm's No.1, has borage as one of its important ingredients.

Dolma - A cold hors d'oeuvre made of grape leaves stuffed with cooked rice, lamb, and fine diced onion. Marinated with olive oil and lemon. Vegetarian versions of this are also made.
