Green garlic is young garlic which is harvested before the cloves have begun to mature. The resulting vegetable resembles a scallion, with a deep green stalk and a pale white bulb.
Green garlic, is one type of garlic that is the early stage of growth before the cloves begin to form. Similar to a fresh green onion or leek that is not fully matured, Green galic has a green leafed shoot attached to a very small white bulb.
At a glance, green garlic could pass for a spring onion, but a quick whiff and you’ll know better. You can mince both the tops and bulb for a milder garlic experience, but what I like is that it feels clean and bright on the tongue.
One report tells us that the sultan's table had salads of "olives, capers, radishes, beets, green garlic, cucumbers, rose flowers and other seasonal things.
Types of garlic include the mild green garlic, the purple-skinned Italian garlic and Mexican garlic, and the common white-skinned garlic = California garlic, which is the most pungent of all.
