Green peppercorns are the unripe berry of the piper nigrum vine, from which both black and white pepper are produced. Green peppercorns are most commonly sold pickled in brine or vinegar, or freeze-dried.

Green peppercorns are harvested at the same time black peppercorns are picked. Instead of being dried they are packed in brine. They may be sold in brine, or later dried after brining so they retain their color.

Green peppercorns can be mashed with garlic, cinnamon or to make a spiced butter or with cream to make a fresh and attractive sauce for fish. Pink peppercorns are called for in a variety of dishes, from poultry to vegetables and fish.

Sharp-tasting unripened green peppercorns are sold in water, pickled in brine, or dried. Brine-packed peppercorns should be rinsed before using. Peppercorns can be ground in a pepper mill or crushed coarsely with a mortar and pestle.
