Green Shallots
An inaccurate but occasionally used name for Scallions.
Gremolada
This garnish is made of chopped fresh parsley, garlic, and lemon zest. It is sprinkled over dishes like ossobuco to add a punch of fresh flavor.
Green shallots
Sometimes labelled in supermarkets as shallots (eschalots) and also referred to as spring onions or scallions, green shallots have edible hollow tube-like leaves and white bulbs. White parts have a stronger onion flavour.
Ballottes à la Niçoise (Fr.): croquettes of chopped pot-au-feu leftovers, cooked potatoes, persillade, and green shallots or chive, served with warm tomato sauce.
6 green shallots, finely chopped
½ x 155g can water chestnuts, chopped
½ x 25og can bamboo shoots, chopped
155g can crab meat, drained
2 tsp sesame oil
1 tbsp soy sauce
2 tsp oyster sauce
2 tbsp dry sherry

Green onions: Same as spring onions or scallions, also called green shallots (an inaccurate but occasionally used description for spring onions).
