Hash browns are a potato dish made by grating, julienning, or finely dicing potatoes and then frying them. There are a number of different forms of hash browns, and numerous individual cultural variations such as rösti and latkes.

For the duck hash, preheat the oven to 120C/250F/Gas ½.
Place the duck legs in a small roasting tray and cover with the duck fat. Cover the tray with aluminium foil and cook for 4 hours.

Now to make the hash browns:
Preheat the oven to 248 degrees Fahrenheit (120 degrees Celsius).
Line a baking tray with a paper towel.
Coarsely grate the potatoes into a colander.
Squeeze out the excess liquid.
Transfer the potatoes to a bowl.
