Heifer - A young cow between eight and twenty months of age. Resulting from the improvements in raising dairy cattle and overcapacity thereof, an increasing number of heifers are being slaughtered for beef rather than being kept for milk.

 


Heifer: A young female cow that has not had a calf yet.
Hen: a female bird. A hen chicken, also called a fowl or stewing chicken, is mature and suitable only for stewing. A young hen turkey (5-7 months old) is suitable for roasting.

Since 1944, Heifer International has worked to ensure that those in need can feed themselves.

Beef tenderloin, or eye fillet (New Zealand and Australia), is cut from the loin of a steer or heifer.

The meat from cows, steers (males castrated when very young), heifers (females that have never borne a calf) and bulls under 2 years old. The eight USDA grades are Prime, Choice, Select, Standard, Commercial, Utility, Cutter, and Canner.

The tenderest beef comes from steers (castrated males) and heifers (females that have not calved). The meat should be a clear, light-red color and firm.
