Hokkien noodles Notes: These egg and wheat-flour noodles are popular in Malaysia and Singapore. They look like thick yellow spaghetti.

 


Hokkien Noodles A round, medium-thick yellow egg noodle. Available fresh in the refrigerator section of Asian grocery stores.
Ichogiri A style of Japanese cutting. Round pieces cut into quarters.

Udang Kering is also used as a main ingredient in dishes, such as Sambal Udang Kering [Spicy Dried Shrimp] - a delicious accompaniment to steamed or fried rice, and noodle soups such as Penang Hokkien Mee [Penang Hokkien Noodles].
