The idea behind a hot water bath is to provide heat for cooking various foods, while preventing the chance for the food to scald or burn.

This is simply a hot water bath around a baking dish. The dish is set in a larger pan and water is poured around it.

Bain-marie - a hot water bath used to keep food warm, also used during baking of puddings, fondants, terrines and when making some sauces where the whisking bowl is placed over a pot of hot but not boiling water.

As the jars for canning are sterilized in a hot water bath or as they are pressure cooked with water converted to steam, the sealed jars become very hot and require a device to remove them from the cooker.

bain-marie (bahn mah-REE) - (1) A hot water bath that is used to keep food warm on the top of a stove. It is also to cook custards and baked eggs in the oven without curdling or cracking and also used to hold sauces and to clarify butter.

Bain-Marie A shallow hot water bath into which another container is placed to cook. Used to distribute heat evenly and prevent scorching. Also used to keep food warm without boiling or over-cooking.

Bain-Marie - A cooking method in which a dish, bowl etc. is placed into a hot water bath (in the oven or on the stovetop) or over a pan of boiling water.

This hot water bath completely leeches all remnants of oil from the tofu, resulting in tofu that you would never magine as having been deep fried.

Combine all ingredients in a 6-quart slow cooker. Cook uncovered for 8-12 hours. Check the thickness and stir occasionally. When it is at the desired thickness, ladle into sterilized pint jars. Process for 20 minutes in a hot water bath.
