Jaggery is an unrefined crude brown sugar. It can be made from the sap of the East Indian jaggery palm, or from sugar cane. When made from the jaggery palm, it is often called gur to differentiate it from the sugar cane product.

 


Jaggery or gur is a specific type of sugar popular in India. It is normally manufactured from either sugar cane or date palms, but recent trends in its manufacture have resulted in jaggery made from the sap of coconut and sago palms.

Jaggery is an unrefined sugar made from the juice of crushed sugar cane stalks. It can be found in East Indian markets, usually in one of two forms; a soft golden sugar with a spreadable texture and a solid cake-like form.

Jaggery - raw sugar, eaten as it is and used to flavor various dishes, even vegetable curries.
Kalonji - (also known as nigella) small black tear-shaped onions seeds, used to add piquancy to vegetable curries and Indian breads.

Jaggery sugar, which may also be made from sugar cane as well as palm sap, is often produced as a rough or smooth jaggery. The rough jaggery has a stronger flavor with both a molasses and caramel taste.

Goa jaggery: pyramids or rounds of dark brown or black palm jaggery. It is used in coconut-based sweets.
Goa vinegar
Goa vinegar made from coconut palm toddy. It is used in the cooking of meat, poultry, and pork dishes, and as a pickling agent.

Jaggery (palm sugar) or molasses. Gosht Lamb. Gram flour. Chickpea flour (besan). Gulab jaman. An Indian dessert. Small 1-inch diameter balls of flour and milk powder deep-fried to golden and served cold in syrup. Cake-like texture. Gurda. Kidney.
