Jalapenos have been adopted by other cuisines as well. Many pizza parlors offer pizza prepared with jalapenos as a topping.

A soft, somewhat elastic-textured Mexican cheese made from cow's milk. It is white in color and has a creamy flavor with a spicy taste from the bits of jalapenos mixed into the cheese.

jalapeno pepper (hal-la-PAY-nyo) - Named after Jalapa, the capital of Veracruz, Mexico, these smooth, dark green (scarlet red when ripe) have a rounded tip and are about 2 inches long and 3/4 to 1 inch in diameter.

Jalapeno chiles or peppers are broad, tapering, thick-fleshed chiles that measure about 2 inches (5 cm) long. The jalapeno is usually dark green, although ripe red ones are occasionally available. It is extremely hot with a distinctively sharp flavor.

Not all Mexican dishes are spicy hot (or picante), but some of them are, and there are many different kinds of chile peppers. Some of the most popular are: poblano, serrano, jalapeno, pasilla, ancho, quajillo, negro, mulate, ...

Adobo Sauce
A thick, dark red sauce native to Mexico. It's made from ground chiles mixed with spices and vinegar. Canned chipotles (smoked-dried jalapenos) are usually packed in adobo sauce.

Chili/Chile: The fruit of certain types of capsicum peppers (not related to black pepper), used fresh and dry as a seasoning. Chilies come in many types (for example, Jalapeno, serrano, poblano) and varying degrees of spiciness.

Careful not to confuse these sweet peppers with habaneros or Scotch bonnets! Those are among the hottest peppers on the planet. Sweet peppers used in sofrito look more elongated, almost like a red jalapeno.

The most commonly used fresh green chillies are serrano, jalapeno and pohlano. These varieties are all very hot.
Dried chillies are very popular and there are numerous varieties available.

Some peppers are sold whole, others are dried and ground, and still others are processed into sauces, such as Jamaica Hell Fire. If you can't get your hands (wash them afterward!) on Scotch bonnets, you can substitute habaneras or jalapenos.
