A. Jerk seasoning, which originated in Jamaica, is a blend of dried herbs and spices rubbed on meat and poultry prior to grilling or added to liquid marinades.

jerk seasoning - A spicy Jamaican seasoning used to marinate fish, pork, chicken, and beef. The mix includes a blend of chiles, allspice, thyme, and lime juice or rum.

Jerk seasoning: A dry mixture of various spices such as chilies, thyme, garlic, onions, and cinnamon or cloves used to season meats such as chicken or pork.
Jus: The natural juices released by roasting meats.

Allspice is used in Jamaican jerk seasoning and in Jamaican soups, stews, and curries. It also is used in pickling spice, spiced tea mixes, cakes, cookies, and pies. Food producers use it in ketchup, pickles, and sausages.

Chef Way: At Boston's Tupelo, chef Rembs Layman prepares rich gumbo with house-made stock and a jerk seasoning blend from Christina's Spice & Specialty Foods.

A popular dish, the main ingredients of shrimp pad Thai are flat rice noodles, shrimp, eggs, habanero pepper, bean sprouts, peanuts and lime. A Jamaican jerk seasoning commonly used for poultry, fish and pork includes the spice of habaneros.

Jerk seasoning can be either rubbed directly onto meat, or blended with a liquid to create a marinade. The slowly cooked meat is then hacked from or "jerked' off the bones and eaten with rice and Ackee, or on soft bread.
