Kaffir lime leaves
The fragrant leaves of the citrus tree native to Southeast Asian countries. The leaves and fruit are widely used in Cambodian, Thai and Lao Cuisine.

Kaffir lime leaves can be grown fresh or bought dried and stored in a spice jar; added to Thai dishes while they are cooking.

Kaffir lime leaves are also popular in the west of Cambodia, but less so in Vietnam. Malay and Indonesian (especially, Balinese; see also Indonesian bay leaf) cuisines use them sporadically with chicken and fish.

Kaffir lime leaves look like two leaves attached end to end, and they are dark green and very glossy, with a hint of leatheriness. The fruits are bright green to yellow and their rinds contain a great deal of flavorful oil.
