KEDGEREE (Hindostani, khichri), an Indian dish, composed of boiled rice and various highly-flavoured ingredients. Kedgeree is of two kinds, white and yellow.

 


Kedgeree
Origin: Indian
A breakfast or lunch dish consisting of boiled rice and cooked flaked fish, topped with a garnish of a hard boiled egg.

Kedgeree:
A British variation of an Indian dish with rice, smoked fish, hard cooked eggs, and bechamel sauce flavored with curry. Finnan Haddie is most often used, but smoked sturgeon or salmon are excellent substitutes.

kefir Fermented milk slightly effervescent and alcoholic, widely consumed in the Middle East and Russia; the kefir bacteria sours the milk (usually cows'), making it thick, frothy, and healthful.

The kedgeree, clam hash, eggs goldenrod, and blueberry pancakes are decent renditions, but we uncharacteristically forgive a few flaws in food quality for swashbuckling waterside character holding out in the midst of overpowering gentrification.
