dashi konbu: Dried kelp that resembles broad, leathery, wrinkly ribbon.

Kombu or konbu is dried kelp. This sea vegetable is available in the form of hard, flat, black sheets that have a fine white powder on the surface. Kombu is used to flavor dashi, a basic soup stock, and sushi rice.

Konbu Kelp, or a large type of seaweed, which may be dried and prepared in a sheet form. Also used as a soup stock or in Nabe (hot pot) dishes.

Take about 20 inches of konbu/kelp (about 1 1/2 oz.), and carefully and thoroughly wipe the konbu with a clean moistened cloth (do not wash kombu as it removes the flavor).

For the dashi, place the konbu and water in a large pan and leave to soak for 10 minutes. Bring to a boil then turn the heat down and simmer for 10 minutes.
