Ladyfingers - Known in Italy as "savoiardi." Sweet, light, delicate sponge cake roughly shaped like a rather large, fat finger. It's used as an accompaniment to ice cream, puddings and other desserts.

Ladyfingers - You may know them as Ladyfingers but these long finger- or oval-shaped cookies are also known around the world as Boudoir biscuits, sponge biscuits, sponge fingers, Naples biscuits, Savoy biscuits (Savoiardi) and biscuits a la cuiller.

Arrange ladyfingers on the bottom of a 9" square pan. Pour liqueur over ladyfingers. Mix Mascarpone with the pumpkin, spices, sugar and extract. Fold in 1 1/2 c. of the whipped cream. Pour mixture over lady fingers.

Any type of cake or ladyfingers forming the cake base should be slightly stale. In fact, Tiramisu is an excellent way to make use of leftovers. Stale cake or ladyfingers will absorb liquid better without becoming soggy.

biscuits a La cuillere (Fr.) Ladyfingers; so named because before the invention of the pastry bag they were shaped by dropping the dough from a spoon.
biscuit tortoni See tortoni.

Savoiardi (It.): ladyfingers. Little, dry, finger-shaped sponge cakes. Used for such famous desserts as Tiramisu and Zuppa Inglese.
Savoie (biscuit de) (Fr.): sponge cake.

Spoon half of the mascarpone mixture over ladyfingers, spreading evenly. Sprinkle white chocolate and bittersweet chocolate over the mascarpone mixture. Top with another layer of ladyfingers (reserve any remaining ladyfingers for another use).

This molded dessert is composed of a filling surrounded by ladyfingers or bread. Apple charlotte is a golden-crusted dessert made by baking a thick apple compote in a mold lined with buttered bread.

Bamia: also called "ladyfingers." Both are names for okra, a green pod that can be cooked crisp or simmered to a gelatinous texture.

Charlotte Malakoff - It has a lining of ladyfingers and a center filling of a soufflé mixture of cream, butter, sugar, a liqueur, chopped almonds, and whipped cream. It is decorated with strawberries.
