Lima beans are relatively large, flat, kidney-shaped light green beans. These beans are usually removed from their pods before eating.
Availability: August and September.

 


Lima beans are flat, greenish white kidney-shaped beans with a mild flavor and a soft texture. They are sold fresh in the shell, or shelled and dried or frozen. Baby lima beans are also available.

Lima beans - Flat, green-tinged beans (called butter beans in the South), which can be parboiled and buttered or used in stews and soups.

lima beans - Lima beans come in two varieties; the Fordhook and the baby lima. The Fordhook is meatier and fatter than the baby limas with has a bolder flavor. Fresh limas can be found sometimes in June, July, and August.

Lima Beans:
There are two common varieties of lima beans: the Fordhook and the baby (also called sieva). The pale green bodies of both varieties have a slight kidney-shaped curve. The Fordhook is larger and plumper than the baby lima.

Lima Beans Thankfully, succulent lima beans are shedding their bad rap as the food to force-feed kids. Add them to minestrone and other soups or combine them with corn and green beans for succotash. Who knows? You might even forgive your parents.

Fava beans are tan, flat beans, which resemble lima beans. However the favas have a very strong flavor (quite bitter at times). Their skins are very tough and must be removed by blanching before you cook them.
