Luau - A Hawaiian traditional feast which usually revolves around the roasting of a whole pig. The celebration and ceremonies are held in combination with dance, music, and song.

A luau (Hawaiian lu'au) is a traditional Hawaiian feast that normally features foods such as poi, kalua pig (pork prepared in an imu, or earth oven), poke, and lomi salmon, among others.

Examples are the Hawaiian luau and the Māori hāngi. The central Asian tandoor, used primarily for uncovered, live-fire baking, is a transitional design between the earth oven and the horizontal-plan masonry oven.

The result is a salt traditionally used to season pork for the luau or to preserve fish after the big catch. Much more than a tenderizer, the salt also adds color to the top of fish, steak, potatoes or other vegetables.

I have lost a recipe for an authentic Hawaiian pudding. All I can remember is it involves boiling coconut and draining it with a cheesecloth. I'm supposed to make this for my daughter's luau tomorrow night and I can't find it on the Internet! ...
