About the size of a greengage, lychees have rough, pink, leathery skins surrounding pearly-white, translucent flesh. The skin should be firm and dry without any bruises. Inside, the flesh is sweet, smooth and really juicy, like that of a grape.

Lychee is also found canned or dried. Slightly smaller than an apricot, fresh lychees make great lunch-bag additions, since the rind protects the fruit until you are ready to eat it.

Lychee
A fruit that originated in China and is now grown in the Far East and the West Indies. It's about the size of a small plum and has a thin, hard, rough shell that comes off easily.

A fruit, with a tough, greenish brown skin, resembling the lychee. It has a milky colored flesh that is eaten by peeling away the skin and eating the pulp from the seed. Spanish limes can occasionally be found in produce markets.

The tree is now grown in other warm countries and to some extent in the United States in S Florida and California. Among variant spellings are leechee, lichee, and lychee.

With each order they decrease the amount of regular white rice they normally serve on the side and replace the higher protein oranges they serve with a compote of lychee and cherries, and double the amount of Chinese tea bags.
