Fortunately, though, most grocery stores carry the cornmeal required to make the dough (called masa de maiz, masa de harina or sometimes maseca).

Ingredients: corn kernels, salt, sugar...

It is made with corn starch or corn dough (masa de maiz), mixed with water and/or milk and sweetened with honey or sugar. The corn starch or dough is dissolved with any remainder strained through a collander.

In English their labels usually list "corn treated with lime" as an ingredient, while the Spanish versions list maiz nixtamalizado. This is because the word is more well-known in Spanish than it is in English.

The result may be cooked into hominy or ground into masa flour, suitable for tamale dough and many other uses in that cuisine. Atole de maiz is a beverage made of ground blue corn with add-ins like chocolate or chiles.
