Maraschino Liqueur - A cherry liqueur made from Maraska cherries grown in Dalmatia. They are sour cherries, tasting a bit like bitter almonds. 30 per cent alcohol by volume.

 


Maraschino liqueur Pronunciation: mare-uh-SKEE-noh Notes: This is an excellent semi-dry clear liqueur that's made with sour cherries. It's made from marasca cherries, which are native to Croatia.

Maraschino liqueur is hard to find in the United States, and many bars do not stock it. Common brands of maraschino are Luxardo and Stock.

The recipe calls for Maraschino liqueur. It's a relatively dry liqueur with a subtle bitter-almond flavor and can be found at any well-stocked liquor store.

A cherry marinated in maraschino liqueur and used for garnishing cocktails, desserts and baked goods. 2. A pitted cherry macerated in a flavored sugar syrup and dyed red or green; used for the same purposes as a traditional cherry.

The only problem was, Hemingway was a diabetic. He got around the problem by creating the "Hemingway Daiquiri," which substituted grapefruit juice for the sugar and adding a splash of maraschino liqueur.

Amor polenta (It.): cornmeal cake typical of Varese, usually made with maraschino liqueur.
Amourette(s) (Fr.): spinal bone marrow of calf or ox. Deep-fried or cooked and served with a béchamel à la crème sauce.
