What is Meringue Powder?
I have a frosting recipe that calls for meringue powder. Is this cream of tarter? I have never heard of it. It is for frosting Christmas sugar cookies.

 


Meringue Powder: A mixture made with pasteurized dried egg whites; used to make long-lasting, hard-drying royal icing. Safe to use uncooked in icings, meringues and mousses. Also adds strength to sugar molds and buttercream flowers.

3 level tablespoons Meringue Powder
4 cups sifted confectioners' sugar (approx. 1 lb.)
6 tablespoons water ...

Royal Icing - Was traditionally used to ice Wedding and Christmas cakes and consists of powdered (icing) sugar, egg whites or meringue powder and water.

(If using egg whites, substitute 1/2 teaspoon cream of tartar for the meringue powder and omit the cold water.) Beat on medium speed of electric mixer until smooth.
