Napa cabbage is also known as Chinese cabbage or celery cabbage. Chinese cabbage is an East Asian leaf vegetable related to the Western cabbage. They are of the same species as the common turnip.

PREPARATION:

Also known as celery cabbage and napa cabbage, has a long shape and closely packed broad, pale green leaves with wide white stems. It has a delicate mustard like flavor. This is the vegetable which is always used in cabbage rolls and Kim Chi.

There are two basic types of Chinese cabbage: firm-headed and loose-headed. The firm-headed group is further divided into the short, barrel-shaped variety (sometimes called Napa cabbage), and taller cylindrical cabbages.

Chinese or Asian cabbage (bok choy, napa cabbage and tatsoi) is a different species altogether, although they are all part of the brassica family. Peak season for most cabbages runs from November through April.

The most commonly found Chinese cabbage in the market is Napa cabbage, which is a pale green, romaine-like variety. Mild celery-shaped bok choy is another variety of Chinese cabbage.
