Natto is an ancient Japanese food made from the Natto soybeans. Natto is soaked and fermented, which makes the soybeans quite sticky, and produces a springy or web effect between each bean.

Natto:
A Japanese flavoring and table condiment made from soybeans that have been steamed, fermented and mashed. Natto has a gummy texture and strong cheeselike flavor; often mixed with other ingredients such as soy sauce and mustard.

annatto oil = annato oil = annatto seed oil To make your own: Heat one part annatto seeds and two parts vegetable oil until the seeds turn the oil a deep orange, then strain out and discard the seeds.

Annatto is used both as a spice and a dyestuff. It may be better known to Mexican and Latin markets as achiote or in the Philippines as atsuwete or achuete .

A rust colored seed that is harvested from the annatto shrub to produce the Achiote spice. Native to Latin America, Spain, and East India, the Achiote seed is protected by a pod containing 40 to 60 red seeds.
