Nuts in cuisine are a much less restrictive category than nuts in botany, the term being applied to many seeds that are not true nuts in the botanical sense. Any large, oily kernel found within a shell and used in food may be regarded as a nut.

Brazil nuts

BRAZIL NUTS, the seeds of Bertholletia excelsa, a gigantic tree belonging to the natural order Lecythidaceae, which grows in the valleys of the Amazons and generally throughout tropical America.

Brazil nuts are technically seeds, not nuts, but their brown nut-like casings have led most people to call them nuts.

hickory nuts - There are 17 varieties of hickory trees, 13 of which are native to the United States, including the pecan nut. The common hickory nut has an extremely hard shell.

Cashew Nuts:
Sweet, buttery, kidney-shaped nuts that grow from the bottom of the tropical cashew apple. The shells are toxic and always removed before the nuts are marketed.

Nuts that can be bought as skin-on, blanched, whole, halved, flaked, chopped or ground. Used in sweet or savoury dishes, especially those with an Arabic influence. There are two main types of almonds - sweet and bitter.

To roast your nuts, coat them in olive oil and place them in a shallow baking pan like a cookie sheet. Toast at 350 degrees for about six minutes, shaking every two minutes. Watch carefully.

Heating nuts, seeds, coconut or bread in the oven until they are slightly browned. This will bring out their natural flavor.
