The Omelet Pan
Gourmet chefs suggest using a heavy-gauge pan, six to eight inches across, with a thick bottom and sloped sides and a long handle like a skillet.

In 9-inch omelet pan or skillet over medium heat, melt 1 tablespoon butter. Pour ¼ of beaten eggs into skillet. Cook, without stirring, 4 to 5 minutes or until eggs begin to set.

We would recommend at least two skillets: one 10- or 12-inch skillet (with lid) plus a small omelet pan. Because eggs tend to stick to the cooking surface, we'd recommend a non-stick omelet pan.

A basic sushi set will contain at least a rolling mat and a rice paddle, and may also include cooking chopsticks, special sushi knives, a tub used for preparing rice and an omelet pan.
