Open crumb bread tends to have an interior lacy structure, and is often chewier than closed crumb bread varieties. It's comparable to a loosely knit shawl, while the closed crumb bread could be compared to tightly knit socks.
The bread has a chewy, open crumb and a delicious sourdough flavor. Landbrot is prepared with a combination of wheat and rye flour and the dough is usually shaped into a round loaf. The crust is dusted with a generous portion of flour.
The water and beer liquid base produces a nice French-style loaf with a characteristic crispy crust and a more open crumb than other bread machine recipes that I have tried.
