An oyster knife can penetrate the hard shell of oysters and clams and slice through the tendons holding the sections together.

Take a pointed oyster knife in one hand and thick towel or glove in the other. With towel, grip shell in palm of hand.

Holding the mussel down with one hand, insert the tip of an oyster knife between the shell halves and lever along the shell edge to sever the hinge. Open the shell and cut out the mussel but take care to keep the liquid for your sauce.

To shuck an oyster, it firmly in your left hand, with your palm protected by a kitchen towel, and with your right hand, insert the tip of an oyster knife near the bivalve's hinge.
