Pumpkin Seeds (a.k.a. Pepitas): Roasted pumpkin seeds are commonly eaten in casseroles, salads, soups and breads. Their rich, peanut-like flavor makes them a terrific snack food.

Pumpkin seeds " also known as pepitas " are collected from the inner cavity of pumpkin fruits. The seeds can be slowly roasted and eaten as snack, salted or flavoured with many other spices.

Its flat top and base, hard fluted shell, and thick ridged stem encase a yellow-orange flesh entwined with flat ivory-colored seeds (called pepitas).

The hull contains much of the nutrients, and its fibrous texture clears out your digestive track. Of course, you can shell the seeds one by one, but it's probably not worth the trouble. Store-bought, pre-shelled pumpkin seeds are called pepitas.
